Italian cream soda

This recipe for cream soda is perhaps not the healthiest of summer drinks but it is fun and children love it! If you're concerned about sugar, you could use a sugar-free syrup, and you could also use coconut cream in place of dairy - this would go well with a pineapple or mango syrup to give a more tropical cream soda!

Serves: 2

1 cup club soda
3 tbsp vanilla syrup
3 tbsp strawberry syrup
1 tbsp milk
1 tbsp cream
Ice cubes
Whipped cream and a strawberry for the top

Preparation method
Add the ice cubes to the glasses and then pour about 1/2 cup club soda into each glass.

Mix the syrups and then measure about 3 tbsp. of the mix into each glass, so that you have a combination of vanilla and strawberry in each (you can experiment with the flavours - raspberry or cherry in place of strawberry also work well). Stir with a spoon to mix the syrup in.

Mix and milk and the cream to create "half and half" and then, just before serving, add about 1 tbsp of the mix to the soda/syrup - the cream will seep down into the soda to create a funky design so be careful not to shake the glasses too much. Add whipped cream on top and the strawberry, or fruit of your choice, and serve (along with something to stir it with before drinking)!
