Pisa Ristorante Galileo

On September 20, 1986, under the supervision of his father, Carmelo, Enzo opened the doors of Ristorante Galileo. Cinzia, who grew up in and around restaurant kitchens before earning a diploma in fine arts, soon decided to put her good taste and natural courtesy at the disposal of Enzo's new venture. Although the "Galileo" started out as a pizzeria, the owners' passion, attention to detail and all-round dedication made it inevitable that the pizzeria would make the leap to fine dining. After more than 20 satisfying years in business, the passion continues unabated. Today, Ristorante Galileo has brand-new premises in one of the most prestigious streets in the historical heart of Pisa (Via San Martino). In addition, the old site in Via Silvestri will remain as a Pizzeria, to be run by the owner's children and by Davide, who are now very much a part of the family business. Specialities include "Prosciutto Toscano" (the local version of what is commonly referred to in English as "Parma ham"), "Lardo di Colonnata" (a special type of bacon fat), and "Bistecca alla Fiorentina" (the famous Tuscan steak), as well as a wide array of fish-based starters and main courses. The restaurant's wine cellar contains more than 400 fine wines, most of which are made in the Tuscany region. Pizza-lovers need not worry - their favorite dish is always available.
